Ingredients
Maine Lobster Meat
1 POUND
Lemon
1/8 CUP JUICE OF ONE
Clove Garlic
1 LARGE CLOVE, CRUSHED
Cherry Tomatoes
1 CUP
Celery
1/2 CUP, THINLY SLICED AND CELERY LEAVES
Red Onion
1/3 CUP, 1/4″ DICE
Curly Parsley
1/2 CUP, COARSELY CHOPPED
Salt And Pepper
1 PINCH, TO TASTE
Light Olive Oil (Or Other Light Oil)
1/2 CUP
Red Wine Vinegar
1/4 CUP
Cheese Tortellini
1 POUND, COOKED WELL
Directions
Step 1:
In a small bowl, combine oil, vinegar, lemon juice, and garlic. Whisk thoroughly and set aside.
Step 2:
In a large bowl, add tortellini, tomatoes, celery, onions, parsley and above dressing. Mix well.
Step 3:
Fold in Maine lobster, salt and pepper, being careful not to shred the meat.
Step 4:
Serve!
