Puerto Nuevo-style Maine Lobster

Ingredients

Maine Lobsters

2 (about 3 pounds)

Mexican beer, like Modelo

1 bottle

Old Bay® seasoning

to taste

Black pepper

to taste

Lard, vegetable shortening or olive oil

⅔ CUP

Unsalted butter

¼ CUP

For Serving
Refried black or pinto beans

1 CUP

Salsa verde

1 CUP

Pico de gallo

1 CUP

Arroz rojo (red rice)

2 CUPS

Flour or corn tortillas

Lemon wedges

Directions

Step 1:

Bring a large pot of water to a boil. Season with Old Bay and add a few splashes of Mexican beer. Boil the lobsters for 3 minutes.

Step 2:

Remove and split the lobsters in half down the middle. Thoroughly rinse the outside shell and lobster meat, discarding the tomalley (green intestines) and the black vein that runs down the center of the tail.

Step 3:

Lightly season the lobster halves with Old Bay and black pepper.

Step 4:

In a deep frying pan, heat the lard, vegetable shortening or olive oil. Fry each half for 5 minutes on each side. Set aside to drain on a paper towel-lined plate.

Step 5:

Serve with refried black or pinto beans, salsa verde, pico de gallo, arroz rojo, tortillas, and lemon wedges. To eat, scoop out some of the lobster meat (see How To Break Down a Lobster) onto a tortilla with rice, beans, pico de gallo, salsa verde, and a squeeze of lemon. Eat like a taco or roll into a burrito.
